CGD Seared Gnocchi
This is the perfect comfort meal that is bound to please all tastebuds. The cherry tomatoes provide a freshness that pairs perfectly with the melt-in-your-mouth taste of the buffalo mozzarella. The Italian flavors we all love will really shine through in this recipe.
Ingredients:
- CGD Seasoned Olive Oil
- 1 package gnocchi
- 3-4 cups cherry tomatoes, halved
- 1 Buffalo mozzarella ball, ripped into 1 inch or so pieces
- 1/4 to 1/3 cup slivered basil
- Salt & pepper
Instructions:
Follow directions and boil gnocchi until tender but still firm. Drain. Coat large, non-stick frying pan with CGD (spicy or original) and heat to medium-high heat.
Add cooked gnocchi and cook over medium high heat. Stir after a minute or two and then just let gnocchi brown without stirring for about 5 minutes. Add tomatoes and mozzarella. Quickly stir to combine. Top with basil, salt & pepper. Cover pan & cook until mozzarella melts. Uncover, lower heat and cook a few more minutes until melted & heated through. Serve alone or as a side dish. Enjoy!!!
